Auslese are top wines made from fully ripe (50%), partly noble rot (50%), selected grapes. Selected, highly ripe grapes harvested late produce very long-lasting, concentrated wines bursting with fruit and minerality. A minimum maturity is required by law for each quality level, which we always exceed because we want to produce the best possible wines.
