Aged 70 months in 228 litre barrels, without toppingup and in a non-temperate room (in the attic). This is called maturation under veil. Maturation under veil. This "flower" will protect the winefrom brutal oxidation and the yeasts that makeup the veil will regenerate. During this slow process, the yeasts die, degrade and then participate in thecomplexity and the olfactory and sensory richness of the yellow wine.
