Le Chapon Fin Guest Chef with Château Chauvin Wine Dinner

Experience a Bordeaux evening at ToTT’s and Roof Terrace in the Excelsior, with chef Nicolas Nguyen Van Hai, from one of the first Michelin-starred restaurants in Bordeaux, Le Chapon Fin. Accompanying him will be Sylvie Cazes, owner of both Château Chauvin and Le Chapon Fin, who will introduce a range of vintages from this esteemed Château .

Founded in 1825, Le Chapon Fin was one of the first 33 restaurants crowned by Michelin in 1933. A Native of Brest, Nicolas began his training in Quimper and later moved on to work in several Michelin starred restaurants such as Le Meurice Hotel, The Saint James, as well as the Sevres and the Clovis from the Sofitel Group.

Located in the north-west part of Saint-Émilion, Château Chauvin is a 15 hectare, Grand Cru Classé estate that had been owned by the Ondet family since 1891. The estate was acquired by Sylvie Cazes and her family in 2014, after she fell for the charms of this beautiful property. To give Chauvin every opportunity for success in this new page in its history, Sylvie Cazes undertook an ambitious programme of restructuring of the viticultural and winemaking techniques. With precision and rigour, with respect for the terroir of Saint-Émilion and the conditions specific to each vintage, Sylvie Cazes and her team have created elegant, balanced, feminine and classy wines with the potential for ageing.
