Gallica Wine Dinner

Join us at the one Michelin-starred Beefbar restaurant, with Rosemary Cakebread, the iconic winemaker whose flagship Gallica Cabernet Sauvignon has been rated 90+ points by Robert Parker 8 different times since her first vintage in 2007. During her 15 years at Spottswoode, as both winemaker and consultant, the Spottswoode Cabernet Sauvignon wines were rated 95+ points by Robert Parker for 11 of those vintages.

Gallica originates from the scientific name for the French rose variety, Rosa gallica, inspiring the wines with the blossom’s long-historical ties to the perfumes of its essential oils. The label itself is inspired by Japanese ink prints and the creative tools behind them, specifically the suzuri. Suzuri are the ink-stones used to grind solidified inksticks, dissolve the ink powder in water, and hold the ink solution.

Growing and making wine is about delighting in the process and the joy of sharing each unique vintage with others. The winemaking processes behind Gallica are simple, relying on small lot fermentation and hand punch-downs to coax out lush tannins. The end goal is to bottle balanced and expressive wines which represent the best of a particular vintage.
