Featuring Chef Nicolas Nugen Van hai with the St. Emilion Grand Cru Classé, “Château Chauvin”

Experience an evening of Bordeaux at the Repulse Bay Verandah Restaurant, with the one Michelin starred Chef of restaurant Le Chapon Fin in Bordeaux, Nicolas Nguyen Van Hai. Accompanying him will be the owner of Château Chauvin, Sylvie Cazes, ex co-owner of Château Lynch Bages.

Founded in 1825, Le Chapon Fin was one of the first 33 restaurants crowned by Michelin in 1933. A Native of Brest, Nicolas began his training in Quimper and later moved on to work in several Michelin starred restaurants such as Le Meurice Hotel, The Saint James, as well as the Sevres and the Clovis from the Sofitel Group.

Dating back to 1841, the property was originally owned by the Ondet family and purchased by Sylvie in 2014. Château Chauvin is located in the world famous medieval fortified city of St. Emilion and has 15 hectares under vines. The wines featured during the dinner have all received over 90 points by Robert Parker. This is an event not to be missed.
